All-Clad 12-inch skillet
January 13, 2009 by Cyndi
The All-Clad stainless 12-inch fry pan/skillet received the very top rating from Cook’s Illustrated in their January/February issue. The testers praised only this pan as having “everything you need in a skillet and nothing you don’t.” They deemed the cooking surface large and perfect, the heat control to be excellent, and the weight and balance outstanding. It is pricey, but it is as close to perfection as you’ll find.
By the way, do you know the difference between a skillet and a saute pan? The skillet or fry pan has low slanted sides, with curved corners, while the lesser used saute pan has high upright sides with sharper corners to prevent quick evaporation of liquids. (Source: Cook’s Illustrated)
