We just got a cast iron pan, but it was a gift, so I’ve never had to worry about how to choose the right cast iron.

- Check for quality. If unseasoned, it will be rough. If seasoned, there should be no bumps.
- Look for a fine surface
- Don’t buy pans with seams. They should be one solid piece.
