Jon’s Favorite Gadget: Digital Thermometer

My kitchen has too many countertop appliances, my cookbook collection runneth over, and my gadget drawers are filled to brim. But one gadget is always at the front of the top drawer - my Taylor instant read digital thermometer.

Sure, I’ve watched pro chefs on television and tried to follow their “squeeze the fleshy part of your hand between the thumb and forefinger” technique to properly determine when a steak is cooked. While it worked…kinda, it never seemed to provide perfect results, (about 135) for a nice rare steak.

So after overcooking yet another batch of expensive fillets mignons on a friend’s grill, I invested in an instant-read digital thermometer.

Since then, every steak, rack of lamb, hamburger, roast chicken and any other piece of meat, and piece of poultry roasted in the oven or on the grill has been perfectly cooked. And we all know, chefs love to hear that complementary word “Perfect!” when we ask our guests how their steak was cooked.

I have tried the remote read thermometers; the ones with the metal probe. Long cord, and large LED screen that magnetically sticks to the exterior of your oven or onto you BBQ, and must admit I did not like it. Plus, I tended to pull the probe out of the meat while still finger blistering hot. It also had too many functions and options and required an owner’s manual to figure it out.

I’ve tried several brands of instant read digital thermometers and found the Taylor #9841 Classic Instant Read High Temp Digital Pocket Thermometer is reliable, affordable and works very well. And for around $18.00, you can’t go wrong. The single temperature version in arond $10.00.

The easy-to-read LCD shows the temperature range from -58°F to 500°F (-50°C to 260°C). You can change the battery, and they even include an extra one in the package. It’s easy to clean and virtually indestructible.

I think mine is worth its weight in….USDA prime fillets…perfectly cooked, of course.
